This chapter outlines the framework and lens through which we can understand the connection between terroir and taste. What we taste in beer or other edible substances is a complex mix of the environmental forces that produced that product. Another layer that elevates certain notes and diminishes others is what we are told to taste. Marketing, promotion, labels, and so forth are all strategies to enable consumers to pick up on desired flavors. Our taste is flexible as we are influenced by a range of factors.
