Chapter 6 zeros in on the flexibility of beer. Beer’s malleability allows for considerable adaptation and still produces a remarkably similar beverage. Not to say that beer’s flavor does not change with certain additions or absences, but brewers can mix and match ingredients and we can still recognize that product as beer. Again, this flexibility is an expression of artistry as much as an answer to the realities on the ground in the Rockies about the lack of easy access to certain products.
