Chapter 5 begins to deal with the brass tacks of brewing. Beyond water (discussed in chapter 3), chapters 5 and 6 address the ingredients essential to brewing. Barley, hops, and additives position brewers in the Rockies in a difficult situation. Few of these ingredients are produced locally, forcing them to search farther afield for them. Beyond this, they make moral choices to use ingredients that are not in line with their traditional brewing practices but that economics and geography necessitate.
