This book sets out to identify, investigate and celebrate a whole range of outdoor ovens, used and built the world over. It focuses on outdoor ovens, meaning those constructed or used outside of the home very often in a communal setting i.e. used for celebratory occasions or communal in the sense that the oven is available to individuals in a community whose personal domestic arrangements do not include this technology. Some are temporary, others a permanent construction while some may be mobile. Some are underground. The book looks at ways they may be constructed and fuelled and provides recipes according to oven type and context.
